Some restaurants will randomly pick a price and start their BYOW program. But, like anything in business, it is more complicated than it sounds! BYOW gives a restaurant another way to differentiate itself. Example: you have amazing steak but a limited wine list. Encourage people to bring their favourite wine to go with your steak. They will be sure to come back.

Here are some questions to think about when trying to setup your BYOW.

  • How does BYOW affect me when creating a wine list? Please read the section on creating a wine lists.
  • Do your customers want to bring wine to your restaurant? - maybe your customers are people who can't wait to bring wine to your restaurant, it will make them happy and you more money.
  • Do you really want BYOW? - if you aren't sure if you want BYOW then don't do it right away. Not many places are doing it so take your time and learn from other restaurants.
  • Why would you want BYOW? - does your restaurant have really great food but a limited wine list? You probably want BYOW. Do people come to your restaurant for the wine? You probably want BYOW so your repeat customers can bring in their favourite wines once in a while.
  • How much should I charge for the corkage fee? - This is a tough question which only you can answer. Here are a few things to keep in mind.
    • How big is your wine cellar? - if you have already fronted a lot of money to build a wine cellar you might want to choose a higher price to encourage people to buy from your wine cellar.
    • How unique is your wine cellar? - if you only stock Jackson Triggs and Wolf Blass you might want a lower corkage fee because people might want to bring a unique wine to enjoy with your food.
    • How much is your wine mark up? - if you only double the price of wine then you need a low corkage to get people to bring in their wine.
    • How much is your food? - if the average cost of your entree is only $10 - $12 then a $20 corkage would be out of place.
    • Do you want lots of people to bring their wine? - this one is easy, the lower the corkage the more people will bring wines. Well, as long as your customers want to bring wine.

These are some questions to help you think about how to setup BYOW at your restaurant. Remember BYOW can be a great way to get people into your restaurant.
