This is a tough question but the best answer is a "wine list
expert". A wine list is a very important aspect of a restaurant. Before

What much do I spend on my wine list?
You can spend as much or as little as you want on a wine list. The three
main components are the number of seats in your restaurant, the type of
food you serve, and the amount of money you have to invest. The biggest mistake
restaurants can make is investing too much money in their wine cellar.

is nice to be able to choose a few different wines to try with dinner. The
downside being that once a wine is open it starts aging quickly. One quick rule-of-thumb,
if most people have to drive to your restaurant offer more wines by the glass.
